These Bacon, Caramelized Onion, and Broccoli egg bites are Whole30 and Paleo approved. Not only are they delicious, but they are incredibly easy to make, versatile, and perfect for an on-the-go breakfast or snack!
Some things just belong together. Like peanut butter and jelly, macaroni and cheese, tacos and ketchup….no? Please tell me it’s not just me!
I think one of the most underrated flavor combos is bacon and caramelized onions….. for real you guys…. if you haven’t had it, prepare yourselves!
This bacon, caramelized onion and broccoli egg bites are THE best! They are insanely flavorful, SO EASY, and store wonderfully in the fridge OR freezer. Make them ahead, warm them up in the morning (or for a snack) and your tummy will be thanking you!
They are the perfect addition to ANY day, not just during your Whole 30!
Bacon, Caramelized Onion, and Broccoli Egg Bites (Whole30, Paleo): Ingredients
Eggs
Egg Whites
Bacon - Make sure it’s Whole 30 approved! No sugar, nitrates, MSG, and all other unapproved additives. Pederson’s Natural Farms makes my favorite Whole 30 approved bacon.
Onion
Broccoli
Coconut Milk
Garlic Powder
Salt
Pepper
Nutritional Yeast
Avocado or coconut oil spray
How to Make Whole30 Egg Bites:
Saute the chopped bacon over medium-high heat just until it starts browning.
Add the onions, mix well and continue to cook on medium heat until the bacon is just about cooked and onions are caramelized. About 10-12 minutes.
Add in the chopped broccoli and cook for an additional 2 minutes, just until broccoli turns a nice bright green color, set aside.
Mix eggs, egg whites, coconut milk, salt, pepper, and garlic powder in a medium sized bowl (preferably one you can pour from).
Spray your muffin tin very generously.
Divide the bacon mixture between the twelve cavities evenly.
Pour the egg mix evenly over all twelve cavities.
Sprinkle the nutritional yeast evenly over the egg cups.
Bake in preheated oven for 20 minutes at 350, or until eggs are set and cooked through.

How To Store Egg Bites
One of my favorite things about these delicious egg bites is how well they store and how easy they are to make ahead and in bulk!
Store them in the fridge in an airtight contained if they’ll be consumed within a few days, or store them in the freezer in an airtight container for more long term storage, up to one month.
Simply reheat in microwave in 20-30 second increments until warm (from fridge or freezer).
Switch up your veggies!
Not a broccoli fan? Simply swap it out with your favorite veggies! Spinach, kale, bell pepper, and zucchini are all delicious choices!
